Red Russian Kale
This is probably one of my favorite vegetables to grow on my land. It’s high in nutrition, can grow well into winter when little else could be harvested (look at my second picture, they are doing so well even in light snow). People usually grow them as annual, but they actually flower the second year. So if you don’t pull them out in the fall, you can harvest couple times in the early spring. Fill in the hunger gap!
We plant kale in the early spring also in the fall. They grow best in cold climates, but you never need to worry about they go bolting in the hot summer days because they flower the second year.
We eat them raw with olive oil, vinegar and nuts. We also make egg omelet, soup, stir-fry and hot pot with them. Our rabbits also enjoy them as little treats.
Note: We are in zone 5. Seeds are untreated and collected from our own garden.
